Mustard is a spicy-aromatic annual plant well- known since ancient times. There are many varieties of the mustard (around 40), but the best known are: white mustard, Chinese (saperda, or Indian) and black mustard. In Russia all varieties of mustard can be observed.
Mustard seeds are used to make mustard oil, which due to its taste and benefits are widely used in the food and pharmaceutical industries. Most of the mustard seeds are used to make prepared mustard. The seeds are also used to make ground mustard, applied in vegetable, mushroom dishes, mushroom marinades, meat dishes and mayonnaise. All varieties of mustard are intended for making different kinds of mixtures, spices, used in the industry and home cooking.
Useful properties of mustard are widely applied in medicine by vascular sclerosis, hypertension, rheumatism, etc. Ground mustard from the seeds is used for making mustard plasters and medical baths.
Contaminants: mineral mixture (stones, sand), stems and pods, millet, wild millet, Tartary buckwheat, rape; unripe, rotten and moldy mustard grains, feeble grains; eroded grains, mustard of other varieties.
